Decarboxylation 101: The Science Behind Every Infusion

Before any flower goes into butter, it has to go through one chemical step first. This page is the reference: the part of the process that explains why the recipe works, not just what to do. Decarboxylation: turning THCA into THC

Raw cannabis flower doesn’t actually contain THC. It contains THCA — an acidic, non-psychoactive precursor. Decarboxylation is the application of heat that strips a carboxyl group from the molecule, releasing it as carbon dioxide and converting THCA into THC. That structural change is what allows the molecule to cross the blood-brain barrier and bind to the endocannabinoid system. Skip this step, and an edible made from raw flower will do very little.

Oven instability

Home ovens commonly run up to 25°F off their set point. That swing is enough to separate a properly activated batch from a scorched one. A calibrated external oven thermometer is worth the few dollars it costs.

Mason jar method

Decarbing coarsely ground flower inside a sealed Mason jar, set in the oven, keeps the kitchen from smelling like an active decarb session and traps the volatile terpenes that would otherwise just evaporate into the room — meaning more of the plant’s aromatic character ends up in the final butter instead of in the air.

Choosing a fat: butter, coconut oil, or MCT

Cannabinoids are lipophilic — they’re fat-soluble, not water-soluble, so they need a fat to bind to before your body can absorb them. Which fat you choose changes both onset speed and how efficiently the cannabinoids actually transfer out of the plant material.

  • Butter — the classic choice. Around 60–65% saturated fat, with milk solids that brown and add a nutty depth that pairs naturally with cannabis’s own earthy notes.
  • Coconut oil — chemically more efficient at extraction. Its 80–90% saturated fat content forms more stable bonds with THC, and it’s the better choice for a vegan-friendly batch.
  • MCT oil — the bioavailability standout. Its medium-chain triglycerides are absorbed straight into the portal vein, which speeds up liver processing and onset.
Water-washing for purity

Simmering the activated flower in a mix of butter and water — then refrigerating — lets the water pull out the bitter, water-soluble chlorophyll and tannins, while the fat-soluble THC stays locked in the butter. After a chill, the butter sets into a solid puck on top, sitting above a layer of bitter water that gets poured off and discarded. It’s the difference between a “swampy”-tasting edible and a clean one.

Lecithin: the bridge ingredient

Lecithin (from sunflower or soy) acts as an emulsifier between the infused fat and the water-based ingredients in a batter. Without it, cannabinoids can clump into uneven “hot spots” — sometimes called edible roulette — where one piece of a batch ends up far stronger than its neighbor.

  • Structural integrity — keeps fat from separating out, for a more even, moist crumb.
  • Bioavailability — as a surfactant, it lowers surface tension, which helps the body absorb cannabinoids faster and more completely.
  • Shelf stability — slows ice-crystal formation and mold growth, extending how long a batch keeps.

A workable starting ratio is about 1 teaspoon of liquid lecithin per cup of fat.

Flavor pairing by terpene

Working with cannabis’s flavor rather than masking it tends to produce a better result. The plant carries a mix of terpenes — earthy myrcene, citrusy limonene, peppery caryophyllene — that pair naturally with certain ingredients.

  • Dark chocolate (70%+ cacao) brings its own bitterness, which blends well with cannabis’s herbal edge rather than fighting it.
  • Salt and acidity — sea salt mutes bitterness on the tongue, while espresso powder or molasses adds a depth that reframes the plant notes as intentional rather than off.
  • Terpene matching — peppery caryophyllene pairs well with deep espresso; earthy myrcene pairs well with brown butter and molasses.

The math of dosing

Before eating anything from a homemade batch, it’s worth actually calculating potency rather than guessing.

Formula: (Weight of flower in mg × THC% × 0.60 extraction efficiency) ÷ number of servings = dose per serving.

Worked example — 28,000mg (1oz) of 20% THC flower:

  • 28,000 × 0.20 = 5,600mg raw THC
  • 5,600 × 0.60 (efficiency) = 3,360mg active THC in the batch
  • Cut into 32 pieces: 3,360 ÷ 32 = 105mg per piece — a very high, medical-level dose

Why edibles hit differently than smoking

When THC is eaten rather than inhaled, the liver converts Δ9-THC into 11-hydroxy-THC — a metabolite that’s notably more potent and crosses the blood-brain barrier more efficiently than THC itself. A high-fat matrix (like a butter-based brownie) further increases systemic exposure to cannabinoids by an estimated 2.5–3x compared to a fat-free delivery method. Both effects compound the well-known advice to dose edibles conservatively and wait before taking more.

Storage and safety

THC slowly oxidizes into CBN — a more sedative compound — when exposed to light and air, so opaque, sealed storage matters for keeping a batch consistent. Vacuum-sealing is the most effective option for limiting oxidation and rancidity.

  • Room temperature: 3–5 days in a cool, dark cupboard.
  • Freezer: up to 6 months.
Never microwave

Microwaves heat unevenly and can easily create localized hot spots exceeding THC’s ~315°F boiling point — effectively vaporizing and destroying the dose you carefully calculated. Thaw and reheat in a low oven instead.

Start low, go slow. Wait at least two hours before considering more. Label batches clearly and keep them in child-proof containers.
